Sous Chef Job Summary

The Sous Chef assists the Executive Chef to ensure a profitable and smooth kitchen operation. Promotes maximum customer satisfaction by maintaining high quality control.  Provides input on personnel performance, schedule and menu changes, special events, and any other ideas that positively impact the restaurant operation.  

Responsibilities and Duties 

  1. Checks levels of supplies and orders paper, produce, dry goods, meat, seafood, poultry, and chemicals for the day-to-day operations.
  2. Ensures safety of employees by maintaining dry floors, maintaining equipment, and reinforcing proper knife skills.
  3. Serves as a role model for employees in appearance and action.
  4. Communicates important information to staff and FOH management personnel.
  5. Ensures a smooth transition from Breakfast to lunch service to dinner service.
  6. Communicates important information to staff concerning: reservations, supply shortages and business information.
  7. Ensures that all Shaker Village and Mercer County Health Department safety and sanitation requirements are met daily.
  8. Meets from time to time with all BOH management.
  9. Performs other duties as assigned by management. 

Skills and Qualifications 

  1. Grasp of math for converting recipes and for application of restaurant accounting formulas.
  2. Understanding and ability to teach culinary technique.
  3. Basic comprehension of food chemistry.
  4. Ability to communicate effectively, clearly, professionally, and in a timely manner both orally and in written form.
  5. Working knowledge of kitchen equipment and systems.
  6. Safe and proper use of knives, chemicals, and fire suppression equipment.
  7. Familiarity with POS systems (preferably Squirrel).
  8. Ability to prioritize tasks - both day-to-day and long term.
  9. Excellent problem solving skills in all areas of operation. Ability to find and implement solution.
  10. Working knowledge of all kitchen stations
  11. Highly developed sense of taste, seasoning , and presentation 

Education and Experience 

  1. A culinary degree is preferred, not required.
  2. A minimum of two years of culinary employment in a fine dining restaurant is required.
  3. Some supervisory experience is preferred. 

Mental and Physical Requirements 

  1. Must be able to multi-task and work in stressful situations
  2. Must be capable of standing for long periods
  3. Must be capable of lifting 50 pounds
  4. Required to balance and stoop or kneel
  5. Frequently lift and/or move objects, tools, ingredients weight 10-25 pounds
  6. Must be able and willing to climb stairs with tools and equipment
  7. Vision abilities include close vision, distance vision, color vision, peripheral vision and depth perception and ability to adjust focus
  8. Must have excellent manual dexterity 

Working Environment and Conditions 

  1. Frequent exposure to hot water, potentially slippery floors, ovens, stovetops with varying degrees in temperatures
  2. Frequent exposure to fluctuating temperatures (inside and outside as needed)
  3. Working in close quarters, standing for hours at a time
  4. Lifting heavy pots and kettles, working near hot ovens and grills
  5. Work hours may include early mornings, late evenings, holidays and weekends
